In collaboration with Gigi's San Francisco and Real Good Fish, we sat down with Top Chef alum Chef Tu David Phu for a Vietnamese mangrove shrimp Sunday supper — and used the table as a starting point for a bigger conversation about sustainability, sourcing, and what it really means to eat well.
